Ingredients:

  • 1 lb lean ground beef (at least 93% lean)
  • 1 package taco seasoning (choose a low-sodium option)
  • 2/3 cup water
  • Chili cheese-flavored baked tortilla chips (choose a lower-fat and lower-sugar option)
  • 1/2 can (about 7 ounces) reduced-fat cheddar cheese soup

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a baking dish (9×13 inches) with cooking spray.
  2. In a skillet over medium heat, brown the lean ground beef until fully cooked. Drain any excess fat.
  3. Add the taco seasoning and water to the skillet. Stir well and let it simmer for a few minutes until the mixture thickens.
  4. Crush the chili cheese-flavored baked tortilla chips and spread them evenly on the bottom of the prepared baking dish.
  5. Spoon the cooked ground beef mixture over the crushed chips.
  6. In a small saucepan, heat the cheddar cheese soup over low heat until it’s smooth and pourable. You can add a little water to reach the desired consistency if needed.
  7. Drizzle the cheddar cheese soup over the ground beef layer.
  8. Bake in the preheated oven for about 15-20 minutes or until the dish is heated through.
  9. Remove from the oven and let it cool slightly before serving.
