Ingredients
- ▢1 can white corn (drained and rinsed )
- ▢3 tbsp light mayonnaise (I prefer Hellman’s)
- ▢1/4 cup chopped scallions
- ▢1/4 cup diced tomatoes
- ▢salt and pepper to taste
Instructions
- Drain the corn and rinse under cold water
- Add to a mixing bowl and add in the mayo, scallions, tomatoes, salt and pepper
- Mix well. This tastes even better after sitting in the fridge for a bit but can be eaten immediately!
