Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 and 1/2 cups rolled oats
- 1 cup dark chocolate chips
- 1 cup chopped pecans
Instructions:
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, and then add the vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the rolled oats, dark chocolate chips, and chopped pecans, distributing them evenly throughout the cookie dough.
- Using a cookie scoop or a tablespoon, drop rounded portions of dough onto the prepared baking sheets, leaving enough space between them for the cookies to spread.
- Bake the cookies in the preheated oven for 10-12 minutes or until the edges are lightly golden. The centers may still appear slightly soft but will firm up as they cool.
- Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
- Once the cookies have cooled, store them in an airtight container at room temperature.
