Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 and 1/2 cups rolled oats
  • 1 cup dark chocolate chips
  • 1 cup chopped pecans

Instructions:

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, and then add the vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Stir in the rolled oats, dark chocolate chips, and chopped pecans, distributing them evenly throughout the cookie dough.
  6. Using a cookie scoop or a tablespoon, drop rounded portions of dough onto the prepared baking sheets, leaving enough space between them for the cookies to spread.
  7. Bake the cookies in the preheated oven for 10-12 minutes or until the edges are lightly golden. The centers may still appear slightly soft but will firm up as they cool.
  8. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
  9. Once the cookies have cooled, store them in an airtight container at room temperature.
