This noodle bowl has all the fabulous flavors of an egg roll, stir-fried in a pan, then loaded up with noodles. Actually brown rice noodles. This is the first time I’ve tried them and they taste great in this recipe. Each serving has 322 calories, 8 grams of fatI’m in love with this dish and hope you enjoy it too!

Ingredients

  • ounces brown rice noodles or rice noodles, see shopping tips
  • cups cabbage, shredded
  • cups carrots, shredded
  • cup celery, diced
  • tablespoon vegetable oil or olive oil
  • ½ pound ground turkey breast (99% fat-free)
  • cup onions, minced
  • tablespoon ginger, from a jar, see shopping tips
  • teaspoon garlic cloves, minced
  • ⅓ cup reduced-sodium chicken broth or water
  • ¼ cup reduced-sodium soy sauce (Tamari for gluten-free)
  • ¼ cup rice vinegar
  • ¼ teaspoon black pepper
  • teaspoon sesame oil
  • ¼ cup thinly sliced green onions, optional for garnish

Instructions

  • Cook rice noodles according to package directions. Drain and rinse in cold water. Set aside. Note: Brown rice noodles take about 15 minutes to cook.
  • In the meantime, in a large bowl combine cabbage, carrots and celery. Set aside.
  • Heat 1 tablespoon oil in a large nonstick pan over medium-high heat. Add turkey, onions, ginger and garlic. Cook about 5 minutes until turkey is browned. Stir in cabbage mixture, chicken broth or water, soy sauce, rice vinegar and pepper. Continue to stir-fry until cabbage mixture is soft. Mix in cooked rice noodles and sesame oil. Continue to stir-fry until completely combined and hot.
  • Divide among 4 bowls. Top each bowl with chopped scallions, if desired.

Ground turkey breast, 99% fat-free, can be found in most supermarkets. It’s made completely from the turkey breast, unlike other ground turkey which is a blend of white and dark meat.

Brown rice noodles or rice noodles are gluten-free and can be found in most supermarkets in the pasta aisle. I found brown rice noodles at Vons/Safeway. Whole Foods sells them too. If your not gluten-free, you can use your favorite pasta such as whole-grain spaghetti. Note: Brown rice noodles take about 15 minutes to cook.

Ginger, in a jar, can be found in the produce section where garlic, in a jar, is sold.
